Leftover Haters Dream Chicken 5 Ways with only 10 Minutes Prep

I like to crock pot meat on Monday and then2  large  chicken  breasts  cooked
serve it several different ways throughout
the week. This basic chicken done with the3  cups  bow  tie  pasta  (8  oz.)
crock pot transforms itself into a broccoli
casserole, a basil pasta, a Caesar salad, a1 jar alfredo sauce (approx. 1 lb)milk
tortilla soup and a white bean chili in less(optional)
than 10 minutes per day. For the chicken,
just place 10 frozen chicken breasts in crock4 medium fresh tomatoes (when tomatoes aren't
pot and cover with chicken broth (one largein season, I substitute roasted red peppers

grated  sharp  cheese
Cook Time: 10 minutes, Prep time: 10
If cooking as a casserole, combine A, B and Cminutes Serves  4

Bake in casserole dish at 350 until heated2 large chicken breasts - cooked and shredded
through - about 30 minutes. If not eatingor  chopped
as a casserole, just combine A and B, add
salt and pepper to taste, and microwave as1  (16  oz.)  can  white  beans

Tuesday's Chicken Tortilla Soup Recipe - So
Easy  and  So  Good1  (16  oz.)  can  diced  tomatoes
Cook Time: 5 minutes Prep Time: 10 minutes1  small  cans  chopped green chilis, drained
Serves:  4
1  clove  garlic
2  chicken  breasts  cooked
1  medium  onion,  chopped
1  can  chicken  broth
1  T  vegetable  oil
1  can  V8  juice
1  envelope  ranch  salad  dressing  mix
1  can  cheddar  cheese  soup
1  envelope  taco  seasoning  mix
1  can  corn
In saucepan, saute onion in vegetable oil
1  can  black  beansuntil browned. Combine all remaining
ingredients until heated through. Serve with
1/3 pack taco seasoning mixchopped upcrusty  bread  or  tortilla  chips.
