Banana Bread Recipes for Diabetics

Back-to-school and the upcoming fall season call1 tsp. salt, optional
for bringing out fruit bread recipes. Following1 tsp. baking soda
are some recipes for banana breads and1/2 tsp. baking powder
muffins. All are suitable for diabetics.1 cup all-purpose flour
BANANA-ZUCCHINI BREAD1/2 cup whole-wheat flour
1 cup egg substitute(or you can use 1 1/2 cups all-purpose flour)
2 cups Equal Sugar-Lite1/2 cup chopped walnuts or pecans
3/4 cup canola oilPreheat oven to 350 degrees. Mash bananas
1/4 cup unsweetened applesaucewith a fork. Add egg, applesauce, milk, sugar
2 medium sized ripe bananas, mashed (1 cup)or Splenda, salt, baking soda and baking powder
2 cups all-purpose flourto bananas. Mix well with fork. Slowly stir in
1 cup whole-wheat flourthe flour. Stir only until flour is moistened.Â
1 1/2 tsp baking powderFold in chopped nuts. Lightly grease a loaf pan
1 1/2 tsp baking sodawith cooking spray. Pour batter into pan.Â
1 1/2 tsp ground cinnamonBake 45 minutes or until a toothpick inserted near
1/2 tsp saltcenter comes out clean. Cool in pan for 5
1 1/2 cups shredded unpeeled zucchiniminutes before removing to a cooling rack.
1 cup chopped pecansÂ
In a large mixing bowl, beat eggs. Blend Equal,BANANA CHOCOLATE CHIP MUFFINS
applesauce and oil into eggs. Add banana and3-4 large bananas, ripe and mashed
mix well. Combine flours, baking powder,3/4 cup Splenda granular
baking soda, cinnamon and salt. Stir flour1/4 cup egg substitute or 1 egg
mixture into egg mixture. Stir in zucchini and1 1/2 cups flour
pecans just until combined. Pour mixture into1 tsp baking soda
two greased 9-inch loaf pans. Bake at 3501 tsp baking powder
degrees for 50 minutes or until a toothpick1/4 tsp salt, optional
inserted in the center comes out clean. Cool in1/3 cup butter, melted
pan 10 minutes. Remove from pans and cool1/4 cup mini chocolate chips
completely on wire racks.Preheat oven to 375 degrees. In a large
Âmixing bowl, blend together bananas, sugar and
BANANA NUT BREADegg or egg substitute. Add flour, baking soda,
3 large well-ripened bananasbaking powder and salt. Blend well. Stir in
1 egg or 1/4 cup egg substitutethe butter and chocolate chips. Fill paper-lined
1/2 cup sugar-free applesaucemuffin tins 2/3 full. Bake at 375 degrees for
1/3 cup low-fat milk15-20 minutes.
