| Here are a couple of my recipes that

| | 2 C triple washed arugula

| friends have said are absolutely

| | 4 oz chevre (goat cheese)

| "craveable". In fact, a couple were

| | 1/4 C toasted pinenuts

| slightly red-faced to admit-they dreamed
| |
| | 1/3 C bottled champagne vinegaretteTo
|
| about them the night after eating them!
| |
| | roast pears: peel, halve and core pears.
|
| And these are easy, adaptable in size
| |
| | Brush with lemon juice and olive oil.
|
| and can be embellished in many ways.The

| | sprinkle with kosher salt and freshly
|
| first is a twist on a classic, I call

| | ground pepper. Place on prepared pan and

| it:Going Greek SaladIngredients:1 lb

| 1/4 C kalamata olives, pitted and

| | and add to the greens. Divide and

| chopped

| | arrange onto serving plates. Portion out
|
| 1/4 C dried cranberries
| |
| | the chevre and sprinkle with toasted
|
| 1/2 med red onion, thinly sliced
| |
| | pinenuts. Drizzle each plate with
|
| 1 Cucumber, peeled, seeded, thinly
| |
| | dressing.This salad is wonderful served
|
| sliced
| |
| | up with some artisan bread.Again, both of
|
| 1/2 C sheep's milk feta, crumbled
| |
| | these "craveable" healthy salads are very
|
| 2 C grilled chicken breast, cubed
| |
| | versitile. Both are terrific served with
|
| 1/4 C toasted pinenuts
| |
| | grilled salmon, for a heartier version.
|
| 1/3 C low-fat raspberry vinegarette
| |
| | If you can't find the pinenuts, toast up
|
| 4 warmed whole wheat pitas, cut into
| |
| | some walnuts, pecans or even
|
| quartersSimply toss all ingredients in a
| |
| | cashews.Maybe now, you can understand my
|
| serving bowl, EXCEPT the pitas, which you
| |
| | "happy dance" to the course called
|
| serve on the side. Plate up onto 4
| |
| | salad!Carine has always loved to cook.
