Chicken Enchilada Soup

Ingredients:aside. Add onions and peppers; sauté over
1-tablespoon Vegetable oilmedium heat for about 2 minutes. Add chicken
1-pound Chicken breast filetsbroth. Combine masa harina with 2 cups of water
1-cup Onion, finely choppedin a medium bowl and mix until blended. Add masa
8-ounces Green chilies or chipotle peppers,mixture to pot with onions and broth. Add
choppedremaining water, enchilada sauce, Velveeta(R)
16-ounces Chicken brothcheese and spices to pot; bring to boil. Shred or
1-cup Masa harinacut the chicken into small pieces and add to pot.
3-cups WaterReduce heat; simmer for 30 to 40 minutes.
1-cup Enchilada sauceServe soup and garnish with shredded cheddar
16-ounces Velveeta(R) cheesecheese, crumbled tortilla chips and sour cream.
1-teaspoon SaltServes 6
1-teaspoon Garlic powderNote: To make it really spicy just add 1 to 2
1-teaspoon Chili powderteaspoons of crushed red pepper.
